This is absolutley DELISH!!!! Comfort food for me to the MAX!! I love it. I made this last weekend and it was so good I'm making it as we speak. I did not do it in the oven I did it crockpot just because I'm pregnant right now and I just want to throw ingredients together and let cook until i'm ready to check on it. I added whatever italian seasoning I had in my pantry to the tomato mixture and let it marinate. You are gonna LOVE to just smell the flavor flowing out of the bowl full of tomatos and seasoning. I also added in some fresh tomatoes I had on hand as well. We ate this over angel hair the first time I made it tonight we are having it over bowtie pasta which I thin it will go better with.

Instead of bread stuffing mix I used my own cubed whole wheat bread and mixed this with 2 cans of italian seasoned diced tomatoes and romano cheese. I seasoned the chicken with Italian seasoning then cut into cubes and lightly breaded with whole wheat bread crumbs and grated romano cheese. I added the chicken to the bottom of a slow cooker and topped with the tomato mixture. Cooked on low for 8 hours then topped with romano cheese before serving. Froze leftovers

Bruschetta Chicken

Banana Bread recipe
INGREDIENTS:
2 eggs, beaten
1/3 cup buttermilk (I sub plain, skim milk when I'm lazy, and it always turns out great!)
1 stick butter, melted
1 cup mashed bananas (about 3 medium)
1 1/2 cups white sugar (I've also used brown sugar, and it too is delicious)
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans (optional)
DIRECTIONS: 1) Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x5-inch loaf pan with non-stick cooking spray.
2) Blend together the eggs, buttermilk, melted butter, and bananas.
3) Sift together the sugar, flour, baking soda and salt. Add to banana mixture. Mix until just combined. Do not overmix!
4) Sprinkle with chopped pecans. Pour into prepared loaf pan and bake in the center of the oven for 1 hour and 20 minutes, or until a knife inserted in the center comes out clean.
How I altered this recipe: I did not add buttermilk because I don't normally have that in my pantry and I don't add pecans. I guess you can add whatever you like. I add either choc chips or raisins and sprinkle cinnamon on top. SO YUM!!! I've made banana bread a good handful of time and I have only found 2 recipes I've liked. I hope you enjoy it. BABY is coming.....
I won't cry wolf. :) He is not coming right now bu he is on his way. Soon, I will stop apoligizing for my lack of attendance but really and truly I have to get ready for this little guy. Since moving in May and trying to get settled in a house has been a bit overwhelming and now that things seem to be calming down just before his arrival I feel like I need to be somewhat ready for him. It's my obligation. My mom threw me a baby shower last Saturday and WOW, we feel really blessed to have friends and family that really did shower us with thier thoughfulness and gifts for our little guy. We have a nice little start off for him as far as clothes go. It was a bitoverwhelming seeing all the blue. I still kind of feel ike he needs a hairbow or something just because I've been doing it for almost 6 yrs and with 3 girls. I won't do that...I just feel the need is all. ;)
This week, tomorrow, I'm going to check out a new doctor. I did see a group of midwives that I had written about and I liked them alot but they are just too far away. So this place I'm praying it works out....it has to work out!!! I'm feeling the need to just settle and I don't want to do that to my baby or myself but you know what GOD is in control. repeat,repeat,repeat.......
I will be going to register Ava for school..... =:O which means back to school shopping. Brainstorming on what is to come in these last weeks before Baby Button is born.
Good news is just in case you are not a facebook friend. Doctor told me last week at 35 weeks that I was 1cm and 50% effaced. YEAH!! progress!! I knew I was dialted because I've been having contractions (BH) for over the past month. I've never had contractions with any of the girls AT ALL until I was in the hospital being induced. So that has been interesting.

Life is moving TOOO fast.....
I have to update my blog. I have stuff on my mind during the week to post but I never get to it because I'm just busy all day with the kids and when Aaron gets home I turn my attention to him.
My quick update for this past week: I went to see a group of midwives last( Thursday)week and I really liked them but after physcially driving there and back home I don't think that is the best way for me to go because it's so far away. So my search for a doctor continued....... I just want to quickly explain to you the doctor situation, this area is diffrent from where I grew up. This area is very go, go, go. The feel you get from the Docs up here is I'm the doctor you are the patient you need my services so I can have whatever bedside manner I want. I've got to much going on already to not have that care and kindness from a professional who is physcially caring for you. I've just been dealing with rude doctors and thier staff, that is what it's been like. So I'm going home on Saturday for a baby shower and while I'm there I will see my doctor on Monday just because I have not been seen. I also booked an appt with a Doctor's office yesterday(they have midwives there as well) that is about 30 mins away from me. I go see them a week from this Monday. I hope this works out because I will be 36 weeks that day I go see them. I have a inkling this baby boy might be slightly early...just a guess. :)
This Past Monday we went home to Hampton rds for my Gestational Diabetes appt. It was an appt/class. First the appt and then like a 2-3 class about what I should/should not eat and how to check my blood sugar level. I have to check it 4 times a day. When I first wake up, 1 hr after breaksfast, 1 hr after lunch and 1hr after dinner. So far I'm doing pretty good. They say after the first week your numbers should be stable and they would like to bring you back in for another appt. I won't be going, my appt is for next wednesday and Aaron and I are leaving to come back home on Monday. I know what my numbers are supposed to be and so far I'm doing good. If my numbers were not where they needed to be then I would have to be put on either oral or injection insulin. Don't want none of that so.... That is what's going on. All my talking I will leave you with a picture. Give you something to look at. People love looking at pictures, so WHY NOT!! ?? :)
